Help - GFCF Cake Mixes too Dry!Any one have any suggestions for making MOIST cakes with GFCF mixes? We've tried Pamela's, Betty Crocker, Arrowhead Mills and Bob's. They're all really, really dry. Need to improve the texture before the end of December and my daughter's 5th birthday. Help! We've been happy with both Cherrybrook Farms and Namaste. I'm also in love with the bean cake recipes at www.spunkycoconut.com.I use Bob's Red Mill Chocolate cake mix and it always comes out moist and fluffy. My son lovesssssss it! I would make sure that you mix it very well and make sure not to over cook it.I dislike most of these mixes. I did find if you use applesauce instead, it really helps with the moisture issue. I second CherryBrook's items.I haven't found anything from CherryBrooks locally. Kids love the tast of the Betty Crocker GFCF. I'm going to try adding applesauce and see what happens.We did Bob's vanilla. The inside part was okay, but theedges were dry (not crunchy like overcooked... just dry like not enough moisture).http://www.cherrybrookkitchen.com/ You can always order is you can't find local! We often use Bob's chocolate cake mix....that's never too dry for us so I wonder if it's getting over baked if you use that mix?Namaste chocolate cake mix is the BEST!!! moist and taste like regular cake...I have it for sam's b-day every year at school and the entire staff comes running to get a piece....they say there is NO WAY you can tell it's gluten free and that if you didn't tell someone they would never know. I make my own frosting with powdered sugar and cocoa powder...the other frostings have corn surup in them....yuck!! Okay here it goes .......I know it will sound crazy but I used the Pamela's cake mix and add 1cup GF/CF Mayonnaise and a little Gf/CF Baking Powder. The Mayonnaise trust me was not my idea found it in the special diets for special kids book. I personally hate Mayonnaise. You can not taste it and the cake is fabulously moist. Hope this helps.
