Any vegans?

Or does anyone know a vegan using the GFCF or SCD diets?

I just got to thinking about it. I have made several attempts at
vegetarianism myself, but I always give up when I lose too much weight. I
can't imagine how hard it must be to be vegan and gluten free. You would
already be rid of the casein though, of course, which is what I found to be
the harder part of GFCF. There is dairy in soooo much stuff. I just wanted to
get some thoughts on this, and if there are any here, what would some of
your staples be?

I am a n ovo-lacto vegetarian, and a diabetic.  I am low-carbing.  It is at once easier and harder than you think.

We do not do GFCF, my dd lives on pizza and pasta and milk and cheese and is so picky she would starve to death if we tried.

My son was picky too. Broadening his tastes follows a healthier diet quite
naturally actually. He used to love pizza and pasta and milk, and basically
all the stuff he can't eat anymore. He is on GFCF but not SCD or any other
allergen restrictions. We still do eggs and soy but in limited amounts. Its
pretty amazing; he has been off gluten and dairy for 6 months now and
only recently he has been trying new things and even getting back to
eating things he used to love before the regression. It's a beautiful thing.
When my husband and I saw him eating carrots again we both welled up.
Before the regression, this child had yellow palms and nose from eating
so many carrots.

We do still make pasta, but with rice noodles and we can make pizza out
of a mix for the crust I got at a GF store locally.

My SIL is a diabetic as well and my neice has neuro issues. I
recommended the starving brains book, but with the diet restrictions she
already has I think she is hesitant to make any new changes to the
household. We are very low meat.  We sort of do meat as a condiment. For a family of 9 we probably eat 3 lbs a week.  We have 5 children that are GFCF (the smallest 5 in my sig) plus my oldest daughter is GF.
We are mostly complex carbs, legumes, eggs, and veggies.  We do eat lots of fruit also, but its natural whole fruit, not canned in corn syrup or jello stuff.  (not that we avoid those like the plague, but they are not staples here)

I thought my mac N cheese, pizza, and milk lover child would starve to death too when we first went GFCF 3 yrs ago.  It was a beautiful thing last night him asking for leftover veggie stirfry (made with Brag's instead of soy sauce)  Sometimes we forget how far he has come and we know that those changes will benefit him for the rest of his life.
