Is it supply and demand?Much the same as certified organic foods - I reckon...you have to be diligent to make sure that it passes the rules/codes.
I think it is more of a VERY cautious way of producing the food...the monitoring and not allowing cross-contamination issue. I know that oreos are made in the EXACT same building and assembly lines as fig newtons store brand and name brand...that's just an example...like how KFC advertises that if you have a shellfish allergy not to eat there b/c of cross-contamination.

Also, I think that a lot of GFCF companies are smaller, so their operating costs are higher, as are their products.
