I get chicken breast fillets and remove the skin. Then I cut them up into nugget size pieces. I dip each piece in corn flour or rice flour , then dip them in beaten eggs and then in gluten free corn flakes that have been crushed to the size of breadcrumbs. You can either put the corn flakes through a food processor to make crumbs or place them in a plastic bag and squash with a rolling pin or a bottle (if you dont have a rolling pin). I spray a baking tray with cooking oil, put the nuggets on the tray and spray them with the oil too and bake in a medium hot oven ( 350 F or 180 C) for 10 - 15 minutes. Very easy to make, doesnt take long and much healthier than the commercial nuggets. Good luck, LizDoes anyone have a great GFCF Chicken Nugget Recipe? There is a recipe on her site. They are pretty easy...just use Fritos or corn chips crushed, you can add egg or rice milk to coat too.

Just wanted to add that your boys are adorable. I want to eat up that baby!
