GF Questions | Autism PDD

For a quick background of our son:  9 yrs (almost), PDD-NOS, verbal, AGGRESSIVE, temper tantrums, orally stimulated, sensory issues/chaotic environments set him off if he's being instructed, but he's fine if not being given direction (go figure!)/food sensory issues (chicken, pork, steak he will not eat).  He is completely different at our house than at his dad's house-???

My questions are about GF.  I did a little research today (just a little) and found that MOST of the gluten (that my son probably eats) is coming from bread...it's the one thing he will CONSTANTLY eat.  He *loves* PB&J sandwhiches.  He also loves Yogurt and Cheese of any kind.  He likes very little veggies, but will eat raw carrots and raw red peppers.  So, how in the world would I get my son to eat if the only foods he likes are filled with Gluten???  ANY suggestions?

And, altho I'm a SAHM, we do not have a lot of cash to spend on special foods-we live paycheck to paycheck.  But we're willing to try if it's within our budget....convincing his dad to do the same, well, that might be a different story-and he has more resources available to him!!!

PLEASE resond via email as I have only been on this board a few times.

Thanks!

The healthfood stores carry GFCF bread, cookies, crackers, waffles ect..they even have baking mixes to make chic nuggets.  IT taste just like bread..it is found in the freezer and keeps forever:) They carry "rice cream" for ice cream..not sure how to replace the yogurt..we did the GFCF diet 4 years ago and the food choices were limited..now they have isles of items:) You can do enzymes too that breakdown the glutein..kirkmans has some good ones..either get at healthfood store or order online:) Good luck!

Rice bread tastes pretty good and my son never even blinked an eye when I started giving it to him instead of regular.

Note, though. The GF diet does not work unless ALL glutein is erased from the diet, meaning that if Dad does not comply your child and you are likely to have more frustration than results.

I do have great GF bread recipes, though if you would like.
