I try using a lot of just natural whole foods. Meats, veggies and fruits. We do stay away from soy milk because Lauren is allergic to it. The reason why others avoid it is because the protein in soy is very similiar to casein with respect to how it interacts with our kids.
For breakfast, we use cream of brown rice (or white) or cream of buckwheat or corn grits. I add a mashed banana to it or some other fruit. This is what I hide her supplements in and she eats it every day.
As far as the almond or rice milk that we use, I at first added banana nectar (Looza brand) to it to sweeten it. She drank it up and eventually I phased out the banana and she drinks it plain.
One thing you must try are brown rice noodles. Tinkyada brand is the best I've come across. They taste like regular noodles. We either put just Smart Balance "butter" on them or I mix in some ground beef and tomato sauce and spices. This is one of her favorites.
I also buy the Energ-E (I'm not sure if I spelled that correctly) brown rice or tapioca bread. It is very dense but I toast it and spread jelly on it and let Lauren dip it in peanut butter. She eats this when her sister has a regular PB&J.
Try the Special Diets for Special Kids (I and II) cookbooks. Lots of great recipes. I now have a cupboard of alternative flours and make a lot of things for Lauren that the whole family will eat. The recipe for chocolate chip cookies in there is the absolute best.
At first I just stuck to meat , fruit and veggies. I use soy products for milk. I know some GFCF diets caution soy. The GFCF foods are pretty gross. We went through alot of peanut butter also. I also made alot of smoothies too.We make the following gff products (keep in mind my kids own't eat veggies, except corn so we have to sneak it in):
Chicken fried rice iwth Bacon, garlic, parshnips and center of zuccini
Almond crusted chicken strips with garlic mashed potatoes
pumpkin and/or zuccini pancakes, cookies, muffins or bread
"Udon" (replace w/ rice noodles) soup with beef or chicken and various root veggies
hot dogs, hamburgers, ham (sliced) all w/o bread
french toast made w/ almond milk
baked/ boiled chicken over rice or served w/ mashed potatos or homemade fires
beef stew over rice or mashed potatoes
pizza made w/ Kinniknnik crust and tofutti cheese
various fruits
Hi, I am new here. My son won't eat any of the GFCF foods from the store. Can you give me a list of what your child likes to eat so I get an idea. We are new to this! Also, do you know what kind of multivitamin I colud give him?
